Nice and convenient ramen place located in the Brewery District next to Supplement King! The Gyoza here is my one of my favourites~

We liked the fried lotus root on top of the ramen bowls! The mixture of colours looked nice, though maybe better placement of the vegetables etc can make it even more appealing! (I have to admit I only moved a few ingredients for a little more oo lala pic haha)
Health: 3.6/5
They say they do not add preservatives so… yay! Though the difficulty many places have is that you need to work even harder with the ingredients to create the flavours. Overall, I’d say it tastes a lot healthier than other places. Later you’ll see the tonkostu, there’s definitely not any visible fat or oils from the fat in the broth. So it’s probably changed to suit more of the health-conscious audience here.
They definitely do make sure to add more vegetables than other ramen places.
This would not be a good place for people with peanut allergies or vegetarians or vegans. There is one salad for vegetarians but there is not vegetarian option (which is the norm in ramen shops).

Atmosphere/location: 4.3/5
What I love is that it’s located in the Brewery district. Which means lots of parking available and there is a lot to do around it, like explore city market!
Inside, it’s a minimalistic, simple black and white theme. The atmosphere gives off a clean but cold feeling (like a food court feeling… do you guys understand what I’m getting at? haha). But it is still nice! Can probably seat around 40 some people.

The price is pretty average for Edmonton standards.

Tokyo Tonkotsu: (2.9/5)
Preston was the one who ordered this. But the flavour (the kotteri fattiness) that we like is not quite there. It’s one of those soups where you take a couple sips but then you get bored with it. I’ll mention the individual ingredients later. We felt bad but we couldn’t really finish the ramen.

The texture of the noodle is not bad. Everyone has their preferences, just not quite exactly my cup of tea~

Yuzu Shio: (3/5)
We definitely liked the broth for this more, you can taste the chicken and the yuzu! As for the Charsu, it wasn’t very flavourful and it was dry and chewy. Preston didn’t like the addition of a huge Bok Choy (mine wasn’t cleaned thoroughly in between the leaf and stem) and we didn’t like the uncooked bean sprouts (they tend to impart a very distinct flavour that takes away from the broth). The ramen egg (ajitama?) is average~
One thing I thought was cool was that they told us this was used for near the end of the meal with the soup. Put a few drops of this into the spoonful of soup and drink it. They didn’t really mention what it would really do other than it enhances the flavour? I’m not sure how much the benefits you would be able to get from this is (since you usually boil the ginseng with the soup to get fuller benefits and I wasn’t sure if it was American or Chinese or Korean ginseng).
They should let more people know about it though! We had to ask in order to figure what this was for.

Bou Gyoza: (4.3/5)
This was our favourite dish out of everything we ate. The manager (we think it’s the manager) herself wrapped it fresh in the morning. Juicy and the flavour is a fragrant pork taste and a crispy outside. It even has my favourite dumpling sauce! (kind of vinegary) Quite expensive for the 4 pieces.

Pork Rice Bowl: (1/5)
Looks amazing, but the Charsu was so dry and tough and the rice was not hot. It was just not what you expect out of a rice bowl!

Fukamushi (Green): (4/5)
Cold and refreshing, just wish there was a way to keep mixing it without clumsily swirling the containers since the sediment settled pretty quickly. It’s more of a tea with a bit of a bitterness, so do not expect something sweet or light.
Service: 4/5
The servers were polite and kind and they had two servers to come to serve our ramen at the same time which I really liked. It didn’t take too long for the ramen, though we just found it strange the order of which the food came in. The appetizers came after the ramen.
Can’t wait to try more ramen places!
